Grilled last night...Mexican Style...

Was going to make the same dish Helena made...even bought what I needed for it. Then, realized, I spent almost 4 hours doing yard work on Sunday, I was going to grill and eat outside if it killed me.

So I scraped some recipes off of Rick Bayless's site.

Grilled Lobster with Smoky Garlic Mojo
Grilled Chicken with Escabeche Sauce
Some grilled corn with some Mexican cream and Queso Fresco

Then, realized I had a lot of food, so Laurie invited a friend over. I tuned to the Mexican station on Pandora...and poured a glass of nice reposado tequila a friend brought me back.

house was too clean today, so rather than mess it up so soon, decided to cook outside.

Grilled up the chicken sausage, threw some rough chopped peppers in a pan (1 yellow, 1 orange, 1 jalapeno) with some evoo and 2 cloves of garlic just smushed for flavor. Cooked on high for a few minutes, then threw in some Sherry wine and cooked on medium low for about 7 minutes, salt pepper.... while the bread toasted on the grill. Comfort food perfect in under 20 minutes.







casings were PERFECT, perfect snap. I was a little nervous as I hear some horror stories about chewy, nasty casings. Thanks to someone on a message board I frequent for the suggestion of airing them dry after stuffing.

Timko Tuesday's Awesome Simple Dinner!

Had one of those nights....went for a run, came home and dinner was spot on and super simple. Preheated the grill to incinerate, which on my propane grill isn't that high (about 700) unfortunately, I'm way too lazy to charcoal it for a Tuesday night. Aside from sourcing the morel mushrooms...(which I got at Whole Foods in Princeton for 39.99/lb....5 bucks worth was more than enough for a cup of risotto/4 servings)

Morel mushroom risotto




Marinated some lamb T-bones in red wine (shiraz)




served the rest with dinner

Grilled up some asparagus and topped with an egg.






perfect.

Such a simple quick dinner, and so damn good. Only prep in this dinner is dicing a shallot and rinsing some mushrooms for risotto really.

Ski weekend and the perfect steak...

Ski weekend was amazing, of course...but I didn't expect it not to be! Pictures on SmugMug..to lazy to post a link.

One hiccup was going to a supposed to be nice restaurant, ordering a ribeye medium-rare due to a SERIOUS craving I have been having for one for weeks...and getting it well...first time I ever sent food back. Since Laurie was done her meal by the time I sent it back I just told the waitress I'd pick off hers as I was already miffed....

Not to be defeated dad came through and dropped off some ribeyes to the residence when I returned home.

Ribeye cooked perfect (medium rare, even color inside, perfect crust and sear outside)

A kind of Gratin concoction that I made from some left over potatoes (not sure on the types i used, but whatever decided it wanted to start growing roots in my fridge got the ax. Put some heavy creme in a pot and the sliced taters and cooked for a few minutes, then put it in a baking dish, poured another cup of heavy cream and some butter milk (hey it was left over too) and then grated about a cup and a half to 2 cups of Gruyer cheese over it and baked for good 25 min.
