Was going to make the same dish Helena made...even bought what I needed for it. Then, realized, I spent almost 4 hours doing yard work on Sunday, I was going to grill and eat outside if it killed me.
So I scraped some recipes off of Rick Bayless's site.
Grilled Lobster with Smoky Garlic Mojo
Grilled Chicken with Escabeche Sauce
Some grilled corn with some Mexican cream and Queso Fresco
Then, realized I had a lot of food, so Laurie invited a friend over. I tuned to the Mexican station on Pandora...and poured a glass of nice reposado tequila a friend brought me back. 
Grilled last night...Mexican Style...

I like the sound of the sauces, especially the smoky garlic mojo. Excellent pictures!
Thanks, the peppers I ended up using for the escabeche were "eh" as I couldn't find banana peppers, but still came out good.
Are those homemade tortillas?
I wish. I need to pick up a tortilla press...then actually learn how to do it!
I'll be in Italy for a month come next week so probably when I get back and I'm sick of Italian food....(yeah right!)
