"My" attempt at replicating "Nicholas's" Beet Salad...

So I tried to replicate my Beet and Goat Cheese salad I had at Nicholas......

I almost got it....some good roasted beets, cubed with the perfect texture, not too mushy, not too al dente, creamy goat cheese, and some glazed crushed walnuts. Simple, but good! We love beets. I didn't try to replicate the beet sorbet though! Next time!




Next time I'll roast them BEFORE cubing them! Doh!
